Well, last night I was looking for inspiration for dinner in the food cupboard and it caught my eye. Barbecue chicken wings - perfect ! I poured some out and was immediately impressed at how thick, deeply-coloured and rich-looking it is, compared to other barbecue sauces that I've used. On the Owen Potts website, they say : "Barbecue sauces can be a little so-so, but with this one, Owen has created a premium sauce that stands head and shoulders above the crowd.?Made with a rich sticky maple base and imbued with the smoky, tangy heat of chipotle chilli, it's ideal for barbecuing and grilling all year round."
I used about a third of a bottle, tossing the chicken wings so that they were evenly coated. I dipped my (freshly washed!) finger into the top of the bottle and it seemed quite hot so I decided to do some plain wings too, in case the Madhouse Mini-testers found the barbecue ones too spicy.
I cooked both lots at the same time for the same length of time and thought that the barbecue wings looked much more appetising than the plain ones.
The sauce gives them a lovely colour and a slightly blackened look in places that makes them look like they've really been barbecued, even though I cooked them in the oven. The sauce really mellows during the cooking process so they weren't spicy at all and even the kids loved them. The sauce is smoky with a lovely sweetness that comes through - totally moreish.
The Madhouse Mini-testers have asked me to make some more, but I will also be trying out the sauce as an addition to stir-fried chicken or pork. I think it could also work well poured over a whole chicken for a twist on the usual Sunday roast.
The ingredients list is very impressive because there isn't a single artificial additive in sight : Tomato Passata, Maple Syrup (9%), Onions, Sugar, Water, White Wine Vinegar, Balsamic Vinegar, Tomato Puree, Molasses, Cornflour, Salt, Chipotle Chillies (>1%), Garlic Puree, Black Pepper.?
